Monday morning, bright and early, still dark outside but the birds are beginning to sing, and I have already pedalled 40 minutes on my elliptical bike, have home-made chicken stock reducing down for a batch cook later on, and am feeling pretty good about my start to the day and new week.
Remember those old thighmaster ads? Well, since my weight loss journey and getting my body back to rights began, I have wanted one of those thighmasters to work my inner thighs as the machines at the gym are too awkward for me to get on, with my hip problems. Yesterday we found them on sale at Lidl, generic and cheap, so I happily snagged one so that I can use it both at home and for my in-car exercises.
Later on, my batch cook involves PF Chang's Mongolian Beef frozen meal for 2 which I will make into 5 portions, adding some stock and additional vegetables, which really cuts down the sodium, along with a Signature rice which will be mixed with white rice cooked in chicken stock, peas and carrots. I love my Chinese, and this provides me with tasty, lower calorie, lower sodium, better-for-me versions of some favourites.
I have a busy day ahead, running friend around to do some errands, and am planning on grabbing a classic wrap from Tropical Grille and spending some peaceful time down at Conestee Park with one of my "good books".
